This week I ran out of bread and forgot to pick it up. I love having the option of having gluten-free bread available to me, but not having it this week got my creative mind thinking. A week with out bread allowed me to change my routine and use what I already had in my apartment.
The other day I wanted peanut butter and jelly for lunch. Honestly, I don’t think you can ever get too old for a classic PB & J! In the past when I have run out of bread I enjoy PB & J on Apple Cinnamon rice cakes. But guess what? I was all out of them too.
What I did have in the house were corn tortillas. That’s when my mind got rolling. When I was a freshman in college I ate the “normal” food, because I had not been diagnosed yet. One of my favorite things to get was the “Crispy Peanut Butter & Jelly Wrap.” You might be wondering how to you make a PB & J wrap crispy? Adding rice krispies
Honestly I hadn’t thought about this meal in a long time. It was good, and I enjoyed it, but it wasn’t really something I missed or needed to have. However, sometimes we need a change. While this is not something I will have on a daily basis, it’s another alternative that I can enjoy. All you will need to make these peanut butter and jelly wraps are:
Your favorite peanut butter & jelly.
Gluten-free rice krispies.
Heat tortilla in the microwave to soften (about 15 sec). Spread peanut butter on tortilla, then jelly. Sprinkle with a small amount of rice Krispies. Roll tightly and slice & Enjoy!
