Great Start to a Summer Goal!

I have been doing a lot of cooking, since I have been home (what else is new!). I actually made a list of recipes that I want to try out this summer, and decided today would be a great day to start tackling the list! One recipe I  have been dyeing to try out is a  banana bread recipe that my mom makes.

This recipe originally came from allrecipes.com. Which by the way, if you have never visited this site I highly recommend it. Our family has found so many great recipe off the site. With a few substitutes, I was able to make this recipe both gluten and dairy free!

Banana Bread
1 1/2 cups Jules GF all purpose flour,
1 teaspoon baking soda
1/2 teaspoon salt
1 cup evaporated cane juice
2 eggs, beaten
1/4 cup butter, melted ( I used earth balance)
3 bananas, mashed (ripe)

Grease and flour two 7×3 inch loaf pans. Preheat oven to 350 degrees F (175 degrees C).In one bowl, whisk together flour, soda, salt, and sugar. Mix in slightly beaten eggs, melted butter, and mashed bananas. Stir in nuts if desired. Pour into prepared pans. Bake at 350 degrees F (175 degrees C) for 1 hour, or until wooden tooth pick comes out clean.

I haven’t had this bread, since I went GF and honestly couldn’t distinguish the difference. It was as good as I can remembered! I would highly recommend this recipe to anyone. (Note: If you are a chocolate lover, top with chocolate chips!) Once again, another success thanks to a great GF flour blend!! Let’s hope I am as successful when I start cooking new dinner recipes.
