G-free Bisquick: Zucchini Quiche
General Mills is one of the great mainstream companies that has developed a wonderful line of g-free products. Included on this list is gluten-free Bisquick. I have yet to make pancakes using this mix. However, the other day my mom made a zucchini quiche, which called for Bisquick. This recipe originally came from my aunt, and was adapted, so that I too could enjoy! Both my parents said they tasted no difference from the original recipe.
3 c. zucchini grated
1 onion, chopped
1 c. GF Bisquick
4 large eggs
1/2 c. vegetable oil
1/2 c. grated cheese (omit if DF)
1 tsp. salt
1 tsp. pepper
2 tbsp. parsley
Mix all ingredients together and pour into a baking dish, 8×8. Bake until golden brown on top. It should bounce back when touched in the middle. Bake about 20-30 minutes. Note: if recipe is doubled, bake in rectangle baking dish.
